Vegan & No Oil - RECIPE #4 Peanut Pesto Glass Noodles


THE STUFF YOU'LL NEED FOR 2 PEOPLE
1 bowl of fresh basil leaves
50g of raw peanuts
5 cloves of garlic (if big, otherwise 10 cloves)
1 green chilli
1 tomato
1 medium size onion
1 packet of glass noodles (approx 100g)

LET'S GET COOKING 

Part 1 - make the sauce
In a grinder, put the basil leaves, 25g of raw peanuts, all the garlic, chopped green chilli, chopped onion, salt and pepper and a little bit of water. Grind it all together into a paste. 

Part 2 - the noodles
Put the glass noodles in boiling water for 5 min. Check that they are soft and then take it out and drain the water. 

Part 3  
In a pan on medium heat, pour the paste and cook it for 5 min. 
Add the noodles and chopped tomato. Mix it well. 
Add salt and pepper. Cook for another 5-10 min

Part 4 - Garnish & Plating
Roast the remaining 25g of peanuts in a pan 
Plate the noodles, add a sprig of basil, roasted peanuts and add some freshly squeezed lemon if you want. The lemon helps lighten the dish.

ENJOY!

Note on quantities: personally I can eat a HUGE dish (like the one on the photo) but Manjeev says it is quite heavy and prefers it as a side dish .
