Vegan & No Oil - RECIPE #1 Vegetable mele wrap

 


THE STUFF YOU NEED FOR 2 PEOPLE

2 wraps (or taco sheets)
200g button mushrooms
1 big carrot
1 green pepper
50g corn
50g green peas
1 medium size onion
1 bunch of coriander or parsley 
dry herbs & seasoning such as fenugreek/origano/rosemary
some satay sauce or any other spread of your choice 

LET'S GET COOKING 

1. Put a pinch of dry herbs in a non-stick pan on medium heat, let is broil for 30 seconds
2. Add diced carrot pieces in the pan over the herbs and stir 
3. Add half a cup of water (to substitute for the oil and avoid herbs from burning) and cover it up for 3 minutes so that the carrots can soften 
4. Add diced onion pieces, bell pepper and mushrooms and cook for 5 minutes and keep stirring on medium to high heat 
5. Once you see the carrots look cooked (they would have become brownish) add corn and green peas, sprinkle some chopped coriander / parsley and add salt and pepper. You can also add tabasco for a spicy flavour, otherwise you can squeeze a lemon over the vegetables once they are in the wrap 
6. Put the wrap in a non-stick pan and heat it up from both sides 
7. Put the wrap on a plate and add a spread of your choice and add the vegetable mix (you can squeeze the lemon now)
8. Make a roll which you can keep closed by pinning in a tooth pick. 

Make sure you eat it soon as the vegetables can make the wrap a little soggy.
