Vegan & No Oil - RECIPE #3 Indian Rösti Sandwich

 THE STUFF YOU NEED FOR 2 PEOPLE

1 Sesame baguette (or any other bread of your choice). You could even wrap it in crisp lettuce if you want to make it without bread altogether 

1 medium size onion

1 tomato

2 big boiled & grated potatoes

1 bunch of coriander 

1 small green chilli

sauce/spread of your choice (anything minty would go well)


LET'S GET COOKING

Part 1 - Making the Rösti

Mix the grated potato with half of an onion thinly slice, some chopped coriander, chopped green chilli (if you want it spicy) and salt and pepper. 

Put it in the non-stick pan over medium heat. With the help of a mould of your hands shape the mix into a round shape. 

Cook from both sides until it's crispy. Make sure you wait for one side to get crispy before you turn it over otherwise it will break. 

Part 2 - Plating 

Cut the bread into the size you want it. You can toast it if you'd like it crispy. 

Put the spread of your choice on both sides of the bread. 

Add sliced tomatoes and add the patty. Top up with chopped coriander and thinly sliced onion. 


Close your sandwich and ENJOY!
